One of our favorite things about cooking all of this vegan and vegetarian fare is the fresh ingredients. Tangy citrus fruits, leafy greens, crunchy peppers, juicy apples, aromatic herbs…we can’t get enough of this stuff! We do our best to avoid using canned and packaged goods, but every now and then we have to make an exception.
We have some crazy hectic schedules and not a lot of extra cash so quick, cheap, simple meals, that still have nutritional value, are crucial for us. This bean salad hits all the marks.
And we do at least opt for the reduced sodium cans of beans. Which are great to buy in large quantities when on sale and then have on hand when you want to just throw something like this together for a quick and yummy meal in a flash….
